Here are eight Star Wars games where players can feel more powerful than any Jedi or Sith from the live-action or animated SW films and shows.
8 Vader Immortal

Vader Immortal: A Star Wars VR Series
One of the most unique and underrated games to feature a powerful, playable Force wielder is the virtual reality game Vader Immortal: A Star Wars VR Series.
Here, players don't actually play as Darth Vader but rather as an adult smuggler who not only discovers that they're Force-sensitive but also a descendant of the ancient Mustafarian Lady Corvax, who is forced to be trained a bit by Vader in order to gain access to the artifact known as the Bright Star.
In the mere hours Vader Immortal takes place, the smuggler goes from a common galactic citizen to one who can go toe-to-toe against Vader in lightsaber combat and crush robots with ease using the Force, feats that even Rey couldn't accomplish during The Force Awakens and The Last Jedi.
7 Star Wars: Battlefront II

In Pandemic Studios' Star Wars: Battlefront II, players are able to recreate some of the galaxy's most chaotic battles from the original six SW movies, playing as common droids and troops or Jedi-aligned heroes or Sith-aligned villains.
While most of the Force-wielding heroes and villains in Battlefront II are those seen in the original saga, they're depicted in a far more powerful way than what's shown in the movies, with most Jedi and Sith being able to Force jump up to three stories high or being able to simply glide in the air using the Force.
Some characters even have access to abilities that they have never been shown using in any other instance, such as Kit Fisto being able to hurl devastating Force Orbs at opponents or Mace Windu being able to create small shockwaves after slamming the ground following a Force jump.

Much like Battlefront II, the Star Wars: Episode III - Revenge of the Sith video game primarily features playable Jedi and Sith from the films, but as a third-person action and fighting game, they're depicted as being far more powerful than their live-action counterparts.
For example, Anakin Skywalker is shown being able to use Force lighting to deadly effect throughout the game against Jedi Knights and Separatist forces, an ability that he's never been able to use, even as Darth Vader, in the films.
Most Jedi and Sith in the game are further able to use Force dash and combine it with other attacks to create devastating moves never shown in the movies, such as Skywalker's Fury Explosion, Obi-Wan Kenobi's Force Shockwave, or Cin Drallig's 1,000 Slashes, with the latter character only briefly appearing in Revenge of the Sith.

In Legends, several Force-sensitive beings went on to become Jedi and Sith following the Battle of Endor, with many being taught by Jedi Master Luke Skywalker but a few were taught by one of the most famous Star Wars video game protagonists of all time: Kyle Katarn.
While Kyle Katarn had always been Force-sensitive thanks to his father being a Jedi, he only truly embraced his Force abilities and skills with a lightsaber during the events of Star Wars Jedi Knight II: Jedi Outcast, which ends with Katarn becoming an instructor at Skywalker's Yavin IV academy.
During the events of Star Wars Jedi Knight: Jedi Academy, Katarn teaches everything he knows to Rosh Penin and Jaden Korr, the player-character, with both quickly becoming skilled wielders of single, double-bladed, and dual-wielding lightsaber stances, as well as Force abilities like Force drain and Force absorb.
4 Star Wars Jedi: Survivor
Cal Kestis' Ever-Expanding Abilities
In Star Wars Jedi: Fallen Order, Cal Kestis went from a surviving Jedi Padawan post Order 66 to a Jedi Knight who quickly relearned his abilities and managed to eliminate dozens of Stormtroopers, defeat two Imperial Inquisitors, and survive a fight against Darth Vader in only a few days.
While Kestis was already more powerful than most movie Jedi in his first game, he became even more powerful in Star Wars Jedi: Survivor, which saw Kestis gain three new lightsaber stances on top of his single and double-bladed stances, with those three being a dual-wielding stance, a lightsaber and blaster stance, and a crossguard stance.
Kestis additionally gained several new Force abilities during his quest to find Tanalorr, such as being able to mind trick giant creatures to aid him in battle and using the dark side to temporarily give himself a damage boost and freeze nearby enemies, making Kestis one of the most powerful Jedi in Disney's Star Wars continuity.
3 Star Wars Knights of the Old Republic II: The Sith Lords

Star Wars Knights of the Old Republic 2: The Sith Lords
BioWare introduced several powerful Force wielders in Star Wars: Knights of the Old Republic, such as Dark Malak, Bastila Shan, and the Jedi turned Sith turned Jedi himself, Darth Revan, but I'd argue that Star Wars Knights of the Old Republic II: The Sith Lords featured a far more powerful playable character with Meetra Surik.
The player-character for KOTOR II, Meetra Surik initially starts her journey in the game as a Jedi Knight veteran of The Mandalorian Wars and one of the few survivors of the Mass Shadow Generator activation over Malachor V who had since cut off her connection to the Force and gone into exile.
During the events of KOTOR II, Surik reestablishes her connection with the Force and manages to defeat Darth Nihilus, Darth Sion, and Darth Traya, some of the most powerful and deadly Sith Lords of all time, thanks to the use of her abilities such as Force Enlightenment and Battle Pregonition to name a few.
2 Star Wars: The Old Republic
Legions of Jedi and Sith Warriors
The Old Republic era was full of some of the most powerful Jedi and Sith ever created in the Legends continuity, which made the abilities and lightsaber skills shown in the films look like simple child's play, with many of these notable Jedi and Sith being seen in the MMO Star Wars: The Old Republic.
Being an MMO, players could play through The Old Republic as either Jedi Knights, Jedi Consulars, Sith Warriors, Sith Inquisitors, or several other non-Force-centric classes, with each Jedi and Sith class taking players on their own unique campaigns full of powerful skills to learn and master like Dark Ward and Force Storm.
These campaigns will have players defeat several deadly Jedi and Sith for the time, like Darth Baras and Jedi Master Syo Bakarn, but The Old Republic's multi-class events and expansions grant players ever more abilities which they can use to defeat even more powerful enemies, such as Darth Malgus, Darth Revan, and Darth Vitiate.

Without a doubt, the best game that allows players to embody a Force wielder who's immensely more powerful than any Jedi or Sith seen in any Star Wars film, show, and even other games is Star Wars: The Force Unleashed starring Darth Vader's secret apprentice Starkiller.
Starkiller was easily one of the most powerful Force wielders in Legends continuity, with him being easily able to hurl enemies, animals, and vehicles all over the place like rag dolls and unleash destructive Force attacks such as the iconic Force repulse, on top of common dark and light side Force abilities like Force lightning.
Some of Starkiller's most impressive feats that showcase just how truly overpowered he was compared to most Jedi and Sith were taking down a whole Imperial Star Destroyer by himself using the Force, defeating both Darth Vader and Darth Sidious in combat, and defeating Obi-Wan Kenobi and Luke Skywalker in the non-canonical dark side timeline.
